Pinot Noir has been described as a vixen, a bitch, a bugger and the holy grail of red wine grapes. All of which, at different times ring true. It is known for it’s faithful expression of ‘terroir’ (or a sense of place). It is also known for a tendency to ‘overcrop’, thin skins and susceptibility to disease. Toeing the line between ‘Holy Grail’ and ‘Holy Shit!’ is the Pinot Noir winemakers lot.
Din takes the good with the bad, edging ever closer to the prize. He also understands that the Search for the Holy Grail is as much about the journey, the side stories, the bested foes and the rescued maidens, as it is about vinous ascension.
Din’s approach to winemaking is simple: do everything possible to grow perfectly balanced grapes then go and write a song. Nothing much that happens in the winery will sway Pinot Noir from it’s course after harvest (save neglect) so a hobby is essential.
